Cherry beer is pretty much done. Very slightly over carbonated. It tastes very similar to the Franziskaner Hefe-Weissbier, just with a cherry after-taste. Im very proud of it

Yes I know I failed with a beer kit and I'm most likely to fail again.. Well... Explain the sweet crystal malt drying out in my conservatory... :P Suckas. If it is iso-valeric acid it would probably take a while to get to a noticeable concentration. Its caused by bacteria, and that takes a while. And as we know yeast>bacteria, so it wouldn't be until after the yeast goes dormant that the bacteria would start reproducing rapidly.
